Here’s my lunch, looks expensive but is REALLY CHEAP
First I made more savoury rice porridge which is great for digestive problems.
SAVOURY RICE PORRIDGE—per person
Ingredients
1/3 cup basmati rice
8-9 parts stock
1 inch freshly grated ginger
2 teaspoons grated lemon zest
Black pepper to your taste
Rock salt to your taste
Method
Simmer the first 6 ingredients then season with the black pepper and rock salt.
I made wild garlic pesto at the weekend – recipe here – it lasts a weeks worth of meals and the wild garlic is FREE at this time of year!
I put the pesto on the plate first, popped the rice into the centre then piled on the purple sprouting and courgette, both of which are easy to grow.
You could top with with chicken, or serve as it is alongside some bean burgers or falafels.
Great for vata types with the chicken added in. pitta types go easy on the pesto.
