This was a tasty lunch that all constitutions could enjoy this spring.
?Barley is a grain Ayurveda recommends for eating in the spring for its dry quality, which helps to dry up any extra moisture that has gathered in the system during winter. It’s very good for kapha types for the same reason. Vata types don’t do so well with barley, it can tip them put of balance, because they need moisture more than kapha and pitta types. For this recipe Vata types could replace with wheat berries.
?Barley soothes the digestive tract and can help to heal the intestinal lining. It also purifies the blood.
?I roasted some beetroot, sautéed shredded red cabbage in ghee, then served them with the barley, some rosemary oil, chopped fermented wild garlic flower buds and rock salt.
Simple, but lovely.
