BUTTERNUT SQUASH WITH BEETROOT & QUINOA
Here’s a simple sattvic supper which I made to eat during the post-cleanse part of an Ayurvedic cleanse.
It’s been a good cleanse, a few old emotional patterns surfacing in a low-key sort of way – we hold molecules of emotion in our body which become toxic to our systems, and they come to the surface to be released when we do a cleanse.
I baked the butternut squash whole and a beetroot. I cooked some quinoa and once cooked mixed in some rock salt, lemon juice, black pepper and the beetroot chopped up, then stuffed the butternut with this, garnishing with goats cheese, olive oil and cilantro.
It’s good to have a light meal that is very simple just after a cleanse.
