Here is a warm, sattvic, cosy, nourishing stew, that is great for Vata season (autumn and early/mid winter. I used a lot of ghee for this, which is great for Vata types but Pitta and Kapha types you could use half the amount ?

INGREDIENTS (2 portions)
I cup cooked faro
5 tablespoons of ghee
Zest and juice of 1 lemon
2 cups chopped broccoli
2 cups finely sliced green chard
1 cup finely sliced collard leaf
1 cup peas
1 cup peanuts that you roast without oil in the oven
A big handful of chopped fresh parsley
1/2 teaspoon turmeric powder
1/4-1/2 teaspoon black pepper
Rock salt to season
Water to just cover the veggies

METHOD
Sauté the veggies (except chard) and spices in the ghee for about 10 minutes, then add the chard, lemon zest and water. Simmer for a couple of minutes then add everything else except peanuts, serve with peanuts and wedges of lemon.
