This makes a great light supper for Pitta and Vata doshas types, Kapha types you could add some chilli and eat occasionally – Ayurveda doesn’t say DON’T eat certain things, it says lean away from some things and towards others, sweet taste and oily food are best for Kapha types to lean away from, but if you’re feeling really well and in balance enjoy occasionally!

INGREDIENTS (per rosti)

small sweet potato grated

A handful of chopped cilantro (fresh coriander leaves)

1 tablespoon flour

1 egg

Salt, black pepper and cardamon to season

METHOD

Mix the ingredients together, form a ball, squash and sauté until brown on both sides. Serve with steamed chard and a dip – pitta tzatziki, Vata – mango chutney, kapha – harissa.
