I’m preparing for a small sattvic smorgasbord supper with a friend. Here’s one of the thing’s I’ll be serving. Kapha and pitta types can eat this in moderation (the water content of courgette can put kapha  dosha out along with the heaviness of olive oil, if eaten in large quantities; and the pungency of garlic can unbalance pitta dosha if already heading that way), Vata types eat as much as you like.

 

INGREDIENTS

2 cups courgette chopped

2 cups black chick peas

1/2 cup light tahini

Juice 1 lemon

1/4 cup olive oil

Rock salt to season to your tastebuds

 

METHOD

Blend all ingredients and serve with some flatbreads & vegetables, or mix into grain bowls.

Browned fennel & courgette with almonds and beans
