CANNELLONI PURÉE WITH BLACK PEPPER & CRUSHED HAZELNUTS
CHARD SAUTÉD IN GHEE GINGER & ROCK SALT
MIXED RICE WITH CILANTRO & TAHINI LIME DRESSING

This was a cheap Sattvic meal which my tummy really enjoyed.

CANELLONI PURÉE

Ingredients per person:
1 cup cooked cannelloni beans
1 tablespoon light tahini
Juice of 1/4 – 1/2 lime
2 teaspoons olive oil
Rock salt
Black pepper

Blend all the ingredients tasting to see how much lime juice, rock salt and black pepper you like.

 

CHARD SAUTÉD IN GHEE GINGER & ROCK SALT
I picked some chard from out back and sautéd it in a little ghee with freshly grated ginger, a Little Rock salt and a squeeze of lemon.

 

MIXED RICE WITH CILANTRO & TAHINI LIME DRESSING

I mixed cooked brown basmati rice with wild rice, sunflower seeds, cilantro and drizzled with tahini dressing.

 

TAHINI DRESSING

INGREDIENTS
1/4 cup light tahini
2 tablespoons fresh lime juice
1 teaspoon raw honey
Rock salt to season
Water

Mix the first three ingredients with 1 tablespoon of water then season with the rock salt.

Butternut squash with beetroot & quinoa
Simple masala for a cold day
