These are perfect for a grey day, they are really easy to make, and eating this after lunch really cheered me up. This recipe is for 4 tarts.
INGREDIENTS
4 sheets filo pastry
2 cups cherries
1 tub mascarpone
1 tablespoon honey
1 teaspoon cinnamon
Melted ghee for the filo sheets
METHOD
Take your first sheet of filo pastry and paint it with the melted ghee, then layer another sheet on it and paint this sheet – continue until all sheets layered. Cut into four squares and use these to line small tart tins (the kind that has a bottom that comes out). Bake these for about 7 minutes.
Meanwhile mix together the mascarpone, honey and cinnamon, and cut the cherries in half. Once the pastry is crisp layer the mascarpone and cherries into the cases.
