This was a really tasty beetroot dish. Great for Pitta and Vata constitutions.

4 whole beetroots peeled, topped and tailed
1 pack of feta cheese
3 tablespoons cream cheese
Juice and zest if unwaxed of 1 lemon
1/2 clove garlic
1 handful of chopped walnuts
1/4 cup chopped fresh dill
Rock salt to season

Wrap the beetroot in foil and bake until soft – about an hour depending on the size. In a food processor blend together the feta, cream cheese, lemon juice and garlic then add the walnuts and dill. When the beetroots are done cut a cross through the centre about 3/4 of the way down and stuff with the mixture…tasty and nourishing.
